Each course is paired with small-production Tuscan wines sourced from historic hillsides, elevated inland zones, and the coastal edge. Expect selections from traditional producers and emerging estates alike—wines chosen for structure, acidity, and clarity of origin, often seen on lists but rarely poured by the glass. Sommelier’s note: these pairings focus on tension, freshness, and age-worthy structure—wines designed to elevate the plate, not compete with it. Subtle references to Chianti Classico, Montalcino, and coastal Tuscany emerge through disciplined technique, clean lines, and layered simplicity. Dishes are designed to be immediately engaging, then deepen with each course—rewarding both first-time guests and those familiar with the rhythms of contemporary fine dining.
